An enzyme used to break down complex starches and sugars so that yeast can ferment them. Allows the brewer/distiller to achieve very low ending specific gravities and produce very dry beers. Suggested usage is .8 - 2.8 oz's per 10 barrels of wort. Add at or near the start of fermentation.
