Niagara wine

I have 2 six gallon batches of niagara wine going. The S.G. is .990 and the temp. is 68. I racked the wine 9/27/11. I will need to rack again 11/27/11. My question is, before the last racking and now the wine is starting to clear but the top 2 to 3 inches is dark and the rest of the carboy is cleari...

nigara grapes

I wil be getting nigara grapes next week and I don't have my primary fermenters ready as there are tied up with two other batches of wine. Can I press the grapes and freeze the juice until I am ready? thanks.

niagara grape wine

I will be making a 5 gallon batch of niagara grape wine. The recipes I look at tells how many lbs. of grapes to use but not how much juice to use. Most recipes says to use the juice but they are not adding any water. If I make a 5 gallon batch do I use all juice?

white grape concentrate

I need to add 1 1/4 pints white grape concentrate to a batch of rhubarb wine. The box says to add 2.8 to 3.2 litres water to reconstitute. Do I need to do this or can I just add the 1 1/4 pints of concentrate? thanks for the help

Potassium Metabisulphite

My Island Mist Exotic fruits White Zinfandel wine kit has a packet called Potassium Metabisulphite. The packet is empty. Is this the same as pottassium meta? If not what do I use. I can't find potassium metabisulphite on your site. Thanks

Mead

I started a batch of mesd 1/22/11. All through the fermation the temp. is 74. On 3/27/11. I checked the S.G. it is 1.000. It look as if the fermation is complete. My question. Can I take the carboy off the heating pad? If so the temp will go down to about 60 to 65. At S.G 1.000 is the fermation done...

Rhubarb wine

I am making a 5 gallon batch of rhubarb wine. Its time to rack. When I get done racking it will be about 3 to 4 inches belowe the bottom of the bung. Can I top it up with water or I have a rhubarb wine kit thats ready to bottle, use some of this?
