I like to taste my wines at each stage. You will find that in general it tastes better at each progressive stage. Tasting it just before bottling will give you the most similar flavor to when it is bottled and aged. However, bottle aging will vastly improve the wine. Don't be too disappointed when you taste it at bottling time. The wine will change during bottle aging quite dramatically.
