Volume

I have an "Ale bucket" that I have used for several batches of beer. It is marked to 5 gallons, but looks to have about 2 gallons of space above that 5gal mark.

1. Is there any reason not to use this as my primary, from a flavor/odor point of view? I do have a "Better wine carboy" or whatever the heck the name is for your plastic wine secondary with the hole and valve . . .

2. Is it big enough? I'm going to get a WineExpert Cabernet Estate kit.

Thanks!

The bucket would make an ideal primary. It is easy to clean, will not break and will not impart any off-flavors. I would use the carboy as the secondary ferementer. The bucket will work as it is about 6.5 gallons and wine from a kit does not foam that much. Just keep an eye on it just to be safe that it does not ferment out the top.
