I am almost ready to bottle the Valpolicella that I made using the Vintner's Reserve kit. It says the kit contains sulfites so I was wondering how long can I age a bottle of this wine before it turns to vinegar?

It won't turn to vinegar but just like any wine it will oxidize over time. I would suggest bottle aging 6-12 months. I don't think I would store it for any longer than 2 years.
