Hey John,
I picked up my mother for cider vinegar last night and have a few questions.

1) if I don't get to it for a few days should the mother be stored in the fridge?

2) your instructions call for 50% head space in the container, why is this?

3) If the hard cider has a slight haze will the vinegar have one also?

Unrelated issue: I found a sealess magnetic pump rated at 200 deg. Ball valve, 1/2" tubing abd step-down connections for the tubing included with the pump on the internet.

Room temp is fine. The culture is very hardy.

2) your instructions call for 50% head space in the container, why is this?

The vinegar bacteria requires air for the conversion of alcohol to vinegar. Provide it with lots of air space.

3) If the hard cider has a slight haze will the vinegar have one also?

Not sure about this. My guess would be yes. You could filter it after it converts if you feel the need for clarity.
