How long until the mother converts liquid to vinegar?

Curious. I suppose it has a bit to do with the ambient temperature in the vinegar room, but from the time you pitch the mother until it has converted the wort or must to vinegar... what is the normal time to vinegar maturity? Weeks? Months? Any significant differences between that time based upon if you are making wine vinegar or malt vinegar?

Two important factors are time and quantity of mother. Given a good warm temp (say above 75 deg F) and a good volume of mother, it should convert within two months.
