I am about to produce my first batch of cheese. Within all the recipes of Ricki Carrolls book, for a 2 gallon milk batch, it calls for "a packet of Starter". The book doesnt specify the volume of "a packet"
I see within the Grape and Granary Catalogue that a packet of Starter contains 2 Tsp, and the catlogue also reads 1/4 Tsp is required per 2-3 gallons of milk. Which results in a packet being enough for 16 gallons
Could you please clarify whether it is "a packet" or "1/4 Tsp" per a 2 gallon batch.
