New to winemaking

Hello, I'm new to wine making and have had lots of me questions answered here by reading your forum. My first attempt/batch of wine is a raspberry from the Oregon fruit purees. I did not put the puree in a filter bag and there is quite a bit of lees? At the bottom of my 1 gallon bottle. I added an entire packet of yeast to the primary fermentor and did not read the package was good for a 5 gallon batch of wine. I transferred to the secondary after 1 week because the sp was less the 1.010. Am I OK?

Also I have seen some wine kits called "Wonder Wine" auction site. Have heard of these? I ordered a couple and have started 2. Each kit makes 1 gallon. The fruit/must is freeze dried. I diffinitely have fermentation going on.

Yes, so far you are ok. Adding more yeast than necessary should not hurt. Using a fermentation bag won't help on the puree because there is very little pulp material there.

I am not familiar with 'wonder wine'.

Thanks for your quick response. Another question. There is nearly an inch to an inch and a half of sediment at the bottom of my one gallon carboy. Will the yeast digest the purée or will I be left with less than a gallon of wine? I've read about yeast canbalizing their own cells, was wondering would the yeast digest the purée first?

Also I purchased a 3 gallon kit of orange chocolate port. I only have 2 two gallon primary ferm buckets. Can I split the the kit for primary fermentation and the combine both buckets into the 3 gallon carboy I purchased?

You will be left short on the volume and you will need to top up with a similar kind of wine.

You can split the batch and combine later. It will be a bit more work but there is no problem doing it.
