Lager fermentation temps

Postby IndyMed » Thu Oct 01, 2009 6:04 pm

Hello all,
Making a Rocky Raccoon Honey Lager.
The yeast I purchased says it works at 51 to 75 with ideal being 51-59f.
The warmest I can get my spare fridge is 48.
My crawlspace flux between about 60-65.
Which one should I use?
Thanks in advance

48 is right on the edge. If you are sure it will hold 48 deg F, I would go with 48. If the fridge will be running any colder, I would opt for the 60 deg range. Honey will slow down the fermentation (especially in the secondary) so be patient and don't bottle till it is clear.

That's what I was worried about. Checked again and the temp was 45. If I'm going to get serious with the lagers I'll look into modifying the stat.
Into the crawlspace it went. Maybe I can work on a root cellar under the barn or something.
Thanks and happy fermentation,
