I am about to start some Colby cheese, and was planning to make a half batch. I was figuring that I would only need to put in half a packet of the Mesophilic culture, but then I noticed that the directions on the packet say that "each packet may be used with up to 2 gallons of milk." (Underlining mine) Does this mean that I should put in the whole thing for 1 gallon? Has anyone tried a half batch before?
This may end up being quite the trial batch, since I'm already working with 2% instead of whole, due to lack of availability at the store.
