sulfite and MLF

I have just ordered 30 gallons of raw juice and plan start fermentation with Pasteur Red yeast + nutrient. I also hope to start MLF at the end of the primary fermentation.

Questions:
  1. How much potassium metabisulfite do I add to kill wild yeast BUT not inhibit the MLF?
  2. Should I add an MLF nutrient just incase there is too much SO2 or won't that help?

Pretty much any so2 added at the beginning of fermentation will blow off with the initial fermentation. You could likely add up to 800-100 ppm and it would not prevent the ml ferment.

Adding the ml nutrient is never a bad idea.
