When do I test the acid level? Im I testing the grape juice or do the test after I add the ingredients, do I adjust the acid level now or after I add the sugar and the rest of the ingredients? I am making a 5 gallon batch and any helpful information would be good.

Also, after I press the grapes if I have to much juice can I freeze it and make another batch of wine later? Thanks for your help.

It does not matter whether you have added the sugar or not. You want to test for acid before fermentation begins. Once fermentation begins, you won't get an accurate reading until after fermentation is complete (due to carbonic acid). So, get your reading after you have added any water and you are at the correct volume but before fermentation.

If you have too much juice after pressing, I would just put the extra in a gallon jug and use it for topping up as you will lose volume when you rack the main batch.
