Hi Todd. You could make up to 5 gallons of wine from one can if you wanted but the more volume you make, the more dilute the flavor would be. Personally I would recommend making 1-2 gallons per 46 oz can. You will still need to add some sugar (adjust O.G. to 1.080) prior to fermentation. After fermentation you can add acid blend to taste and if you want it more sweet, add sorbate and sugar to taste at bottling.
