Hi Dan. The yeast is used to create the carbonation. When yeast is added to the sugar/soda mixture, the yeast multiplies and creates carbon dioxide which give the soda its' fizz. If there is any alcohol created, it is a very minute amount. If you have a co2 tank and regulator, you can add the co2 without using yeast.
