Biscuit malt is 18-27 degrees Lovibond and contributes a "biscuit" or "bread dough" flavor to beer. It is used in some Belgian ales. It can impart a deep golden to brown color. For brown ales, use 5-10% of grist (about one pound in an extract batch), 2-5% of grist for dark ales.
